This post is long overdue but I finally have time to share one of my favorite recipes with you guys! One day last year I went over to my Aunt Joey and Uncle Bryant’s house. We spent the day in the kitchen making pizza, dessert and a healthy drink to wash everything down.
I think one of the biggest problems I had to overcome when I started eating healthier was what to cook. The recipe I am about to share will definitely satisfy your junk food cravings but it is 100 percent healthy and foolproof.
First things first: make the dough. Recipe as follows:
2 cups spelt flour
½ tsp. sea salt
½ tsp. baking powder
2 tsp. coconut or olive oil
¾ cups hot water
Mix the dry ingredients.
Add oil and water.
Mix with hands.
Rub dough in oil then knead on a floured surface.
Rub in oil again and place in bowl.
Let rest covered for 5-10 minutes (although you may skip this step)
Divide into golf ball sized balls, roll out, then fry in coconut oil.
After making the dough, it’s time to add the toppings:
For the sauce we used tomato sauce that we seasoned ourselves.
Topping included dried herbs such as parsley, basil, and oregano, fresh herbs, kale, red bell peppers, red onion, mushrooms, jalapenos, cheese, and ground turkey, since I eat meat.
All ingredients were organic. The coconut oil was unrefined. The turkey was cage free, no antibiotics, and all that jazz…
We cooked the ground turkey in coconut oil and seasoned it with sea salt, red pepper and garlic powder. We also sautéed the mushrooms before we put it on the pizza. And basically we just piled the toppings on, put the cheese on top and then baked until the cheese was melted. We put it under the broiler for a few seconds to get crispy and voila! BEST. PIZZA. EVER.
For dessert we had pineapple pizza and we made bissap to drink. I will post recipes and pics in another post. Enjoy!
